Well, they’re a classic British Christmas treat in the form of individual pies. They’re usually made with shortcrust pastry and filled with dried fruits, spices, sugar, and sometimes beef suet  – the filling is called mincemeat. Yep, sounds totally weird I know. Personally, I’m not actually the biggest fan of mince pies, they just don’t do it for me. I made my own version a couple of years ago which strayed completely from tradition and were really yummy. However, I love all the flavours that go into a mince pie so a Christmas Mimosa along that theme is a real winner in my books!

These Mince Pie Christmas Mimosas don’t contain any mincemeat, so they’re vegetarian (well, vegan actually) so all can enjoy! To get the flavour of the mince pies in these Christmas Mimosas without using, you know, actual mince pies I made a mince pie flavoured syrup. It’s made using brown sugar, cinnamon, ginger, nutmeg, cloves, and clementine zest – how good does that sound? It’s not only delicious, one of the best things about making the mince pie syrup for these Christmas Mimosas is it makes your house smell absolutely divine! I made a batch at my mum’s house while she was out, and she came home and the first thing she said was “wow, it smells like Christmas in here!”. It will definitely get you feeling festive, and super cozy!

The festiveness of these Mince Pie Christmas Mimosas doesn’t stop at all the warm, delicious spices in the syrup, for the juice part we use fresh clementine juice. Clementines are my favourite winter/Christmas citrus, I go through so many this time of year – either in recipes or just eating them as they come! Clementine juice works perfectly in these Mince Pie Christmas Mimosas as it complements the spiced syrup beautifully, and we all know citrus juice is the best accompaniment to champagne – plus it’ll give you that dose of vitamin C on Christmas morning so you can pretend you’re starting the day off healthy!

Mince Pie Christmas Mimosas - one mimosa with some mince pies behind it 

The recipe for these Mince Pie Christmas Mimosas calls for champagne, as that is what we usually use in a mimosa – I love a brut champagne for these Christmas Mimosas because it’s nice and dry, to balance the sweetness of the mince pie syrup and clementine juice. You can also use a Spanish Cava (I’m a big fan of cava these days, it’s so much better than it used to be – just don’t buy the cheapest bottle!), or even prosecco (although technically it will become a Christmas Bellini then). Whatever bubbles you use for these Mince Pie Christmas Mimosas, they’re going to be delicious and you’re going to feel so festive and happy drinking them! So grab a glass, and let’s get mixing!

These Mince Pie Christmas Mimosas are the perfect holiday cocktail to enjoy on Christmas morning! They’re made with a mince pie flavoured syrup, fresh clementine juice, and champagne.

Ingredients

For the mince pie syrup:

  • 1/2 packed cup (100g) brown sugar
  • 1/2 cup (120ml) water
  • 1.5 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 6 cloves
  • 1/2 tsp ground ginger
  • 1/2 tbsp clementine zest (approx 1 clementine)
  • 1 oz honey bourbon (optional)

For the mince pie christmas mimosa:

  • 1/2 tsp ground cinnamon
  • 1 tsp brown sugar
  • 1 oz mince pie syrup 
  • 2 oz clementine juice
  • 2.5 oz champagne

Instructions

To make the mince pie syrup:

  1. Put all the syrup ingredients, except the bourbon, in a small sauce pan, stir to combine, and bring to a boil on a medium heat. Turn down to a simmer, and simmer for 10 minutes. Remove from the heat and stir in the bourbon, if using. Leave to cool completely and then strain through a fine mesh sieve. Store in the fridge. 

To make the mimosa:

  1. Combine the cinnamon and sugar and spread out on a shallow plate. Run clementine wedge (perhaps cut from your juiced clementines) around the rim of your champagne flute, and dip in the sugar mix. 
  2. Pour 1 oz of mince pie syrup in your flute, add the 2.5 oz of clementine juice, and top up with champagne. 

Notes

The mince pie syrup recipe makes about 1/2 cup (120ml) of syrup, store any left overs in a sealed bottle or jar in the fridge, will keep for about a month.

      If you ever get the chance to try a mince pie though, I definitely recommend it, while I’m not a huge fan of them myself, they’re such a longstanding tradition here, it wouldn’t be Christmas without one!
