There are few things I enjoy more than coming up with delicious and creative new cocktail recipes, from twists on the classics to my own original creations. With that being said, sometimes a simple classic mixed drink is exactly what I want and need, and a gin and tonic is definitely somewhere near the top of my list of favourites. The fragrant botanicals of the gin, the bitter quinine of the tonic, and the citrus burst from the lemon or lime twist is just a winning combination. It’s a great drink to serve at any occasion. But, because it’s Christmas, I decided to dress it up a little for the festive season, and this Holiday Gin and Tonic was born!

Mince Pie Christmas Mimosas - champagne being poured into the glass, full sizeSo, mince pies? Some of you on the other side of the pond might be wondering what these weirdly named treats are! Well, they’re a classic British Christmas treat in the form of individual pies. They’re usually made with shortcrust pastry and filled with dried fruits, spices, sugar, and sometimes beef suet  – the filling is called mincemeat. Yep, sounds totally weird I know. Personally, I’m not actually the biggest fan of mince pies, they just don’t do it for me. I made my own version a couple of years ago which strayed completely from tradition and were really yummy. However, I love all the flavours that go into a mince pie so a Christmas Mimosa along that theme is a real winner in my books!

These Gluten Free Shortbread Cookies with Cinnamon & Clementine might just be my new favourite Christmas cookies (although they have real tough competition with my Gluten Free Eggnog Cookies in the running). The idea for these Gluten Free Shortbread Cookies was actually born from another idea. I had these grand plans to make a Christmassy layer cake with indulgent frostings and dripping boozy sauces, and I was going to decorate it with festive flavoured Gluten Free Shortbread Cookies. Well, the cake was a total bust – it definitely has potential once I get the recipe right, but unfortunately I don’t have any time left to get that done before Santa arrives, so it will have to wait until next year. Even though I had no cake to decorate, I decided to make the Shortbread Cookies anyway, and I’m so glad I did!

Eggnog? Do you love it or does it kind of ick you out? Eggnog isn’t something that ever caught on much here in the UK, but the idea of it and the flavours really intrigued me. Eggs, cream, nutmeg and booze – sounds pretty damn delicious to me! So when Starbucks starting doing the eggnog latte over here I had to try it, and I thought it was delicious! I was firmly on the eggnog train. But I know it grosses some people out, especially those who have never tried it, I think it’s the idea of drinking raw eggs (even though it really is pretty safe to do so these days). But as someone who loves an egg white in her cocktails, that doesn’t put me off at all! Can you believe it’s almost Christmas time?! Where has the year gone? I swear, the older you get the faster the time goes by! The calendar doesn’t lie though, so it’s definitely time to start getting ready for the holidays! And I don’t know about you, but I need a few festive cocktails to get my Christmas spirit going – this Cranberry Martini is perfect for that! Cranberries are wonderful this time of year, and certainly not just for Thanksgiving! Here in the UK we don’t have Thanksgiving, so the turkey and all things cranberry are reserved for Christmas. Besides, you cannot deny how festive the colour of this Cranberry Martini is – it’s totally going to get you into the Christmas spirit just by looking at it!
