Autumn is well and truly here, the leaves are turning shades of red and brown, the air is crisp, and the mornings are dark. In England autumn usually means lots and lots of rain too, but so far we’ve been spared from too much rain and this weekend is turning out to be pretty warm. Since we’re in October now, blackberry season is over – but my freezer is still fully stocked with these gorgeous, sweet berries and, thus, these Gluten Free Blackberry Cheesecake Brownies were born.
These totally fudgy, gooey, decadent Gluten Free Blackberry Brownies are the ultimate chocolate fix. The rich, fudgy chocolate combined with bursts of sweet wild blackberries will have you coming back for more. They’re so easy to make, and no mixer is needed – so get your apron on and let’s bake!
September is one of my favourite months, it’s where summer meets autumn and the leaves start turning. And, of course, it’s when everything pumpkin spice starts appearing. I LOVE all things pumpkin spice, because I love fall spices – they’re so warm and inviting, comforting even. But, this post isn’t about the wonderful spices of autumn – it’s about the wonderful produce that comes along with September. My favourite being blackberries!
These Gluten Free Peanut Butter Cookie Dough Bars are decadence at its finest! Soft, delicious gluten free cookie dough is combined with peanut butter, made into a bar and topped with chocolate and peanut butter combined. They’re no bake, so easy to make, and absolutely yummy!
Okay, hands up if you’ve ever eaten raw cookie dough when you, or someone else, is baking cookie dough? If you didn’t put your hand up, I can only assume you’re lying! Even though we’re told it will give us salmonella, we just can’t resist, it’s so yummy – and hey, you have to check the dough is worth baking into cookies, right? To be honest, the likelihood of getting any kind of food poisoning from raw eggs is very, very low – especially if you’re using fresh eggs. But raw egg is kind of not nice to eat, so edible, eggless cookie dough to the rescue!
These Gluten Free Triple Peanut Blondies are chock full of delicious peanut goodness, with peanut flour, peanut butter and peanuts in their original form. They’re chewy, moist and absolutely yummy – a peanut lover’s dream! They’re so easy to make, so give them a try today – you won’t be sorry!
Do you ever feel like you’re constantly playing catch up and never on top of your to-do list? That’s pretty much a constant state for me, but lately it seems to be getting worse! Even with some time off work recently and quite a few four day weeks (yay for bank holidays!), I just feel like I never have enough time to get things done for the blog. On top of all the recipe development, baking, photography and writing, there always seems to be something new to add to the list for the behind-the-scenes stuff – I think I need a personal assistant whose only job is to kick me up the butt to get going with these things! Any takers?! Don’t get me wrong, I’m not really complaining, I love doing the blog, it’s just hard to stay on top of everything! I’m sure I’m not the only one who feels like this, whether it’s in regards to blogging, work life, home life, all of the above! There’s just never enough hours in the day, is there?
Buttery, melt in your mouth shortbread, smothered in sweet, fruity jam and topped with even more buttery goodness in the form of shortbread streusel. These Jam Shortbread Cookie Bars are the most delicious cookie bar you will ever eat. They are gluten free, ridiculously quick and easy to make, and so yummy you won’t believe it! Don’t need to eat gluten free? No worries, one simple substitution means you don’t have to go out of your way to buy gluten free flour! These Jam Shortbread Cookie Bars are the perfect Mother’s Day treat, and you can use your favourite flavour jam!
Mother’s Day Champagne Cocktail
When I asked my mum what she wanted me to make for Mother’s Day, she said a cocktail and something with shortbread! I’ve already shared the amazing Champagne Cocktail that I made for her, and now it’s time for the shortbread to take the spotlight. She has given up chocolate for March (aka torture) so something sweet and fruity it was! I got the inspiration for these Jam Shortbread Cookie Bars when I was in Tesco, lusting over a packet of Jammie Dodgers – a classic British biscuit (*ahem* cookie) that is jam sandwiched between shortbread! I’ve made my own homemade version of Jammie Dodgers before, which are so good, but I took the idea to the next level with these Jam Shortbread Cookie Bars.
