I think Halloween has got to be one of the most fun times of the year for us food bloggers! It’s a really great way for us to test our creativity and get a bit crazy in the kitchen , it’s the reason I love it! I welcome any opportunity to really get my creative juices flowing, and when else can I make a cocktail that looks like blood and it not just be totally weird and kind of gross?! Maybe Valentine’s day hahaha! This Bloody Bellini was so much fun to create though and for that I thank Halloween!

The Black Widow Cocktail is a dark, shimmery, and deceptively sweet cocktail. It is the perfect spooky sipper for Halloween and the next instalment of my Marvel Cocktail Series. It's made with gin, crème de mûre, and black sesame syrup. It's sweet, a little nutty, and visually awesome.

I really wanted to make a Halloween cocktail that really captures the fun of Halloween, so it not only needed to be tasty, I wanted it to be either spooky or a bit gruesome too! The Bloody Bellini, for me, is the perfect mix of totally yummy and awesomely gross! When I first made the “blood” syrup for rimming the champagne flutes, I was a little grossed out by how much it really did look like blood – thick, dark red syrup – but one taste and I got over it, it’s tasty blood! The secret to making a raspberry syrup look like real blood, and not just bright red, is cocoa powder! What do you think? Would you be fooled into thinking this was real blood?

The other part of this Bloody Bellini that makes it perfect for the vampire in your life is the raspberry puree – this has just a touch of cocoa powder to deepen the red colour but not over power the flavour of the raspberries. It also has a little lime juice to cut through the sweetness of the raspberries. It couldn’t be simpler to make, just put everything in your blender and blend until smooth, it will need straining to get rid of those pesky seeds! Once you have rimmed your champagne flutes with the yummy blood, you just fill them 1/4 full with the raspberry puree and top up with bubbly prosecco. To really make a good Bloody Bellini, you obviously need good prosecco! Tesco is my usual stop for some bubbles, and they always have plenty of Dino Prosecco, my Italian Bubbles of choice, in the sparkling wine section – so I am set!

The Bloody Bellini is, of course, perfect for all the vampires in your life – it will keep them happy and away from your jugular! Those not inclined to drink blood will be happily sipping on a Bloody Bellini too – blood never tasted so good! If you also happen to have some mini vampires at your Halloween party this year, you can keep them happy with a non-alcoholic Bloody Bellini too, just swap out prosecco for some sparkling grape juice! Kids will love the gruesome, bloody look!

A delicious Halloween cocktail for Vampires. Raspberry Chocolate "blood" syrup, raspberru puree and Proseco make up this delicious and easy Bloody Bellini

Ingredients

For the Raspberry Chocolate "Blood" Syrup:

  • 1/2 cup (60g) raspberries, fresh or frozen
  • 1/4 cup (50g) sugar
  • 1/2 cup (120ml) water
  • 1 tbsp cornstarch (cornflour) + 1 tbsp water
  • 1 tbsp cocoa powder

For the Bloody Bellini:

  • 1.5 cups (180g) raspberries, thawed if using frozen
  • 1 tbsp lime juice (1 lime)
  • 1 tbsp water
  • 1 tsp cocoa powder
  • 1 bottle of Prosecco
  • gummy vampire teeth for garnish

Instructions

To make the Raspberry Chocolate "Blood" Sryup:

  1. Put the raspberries, sugar, and water in a small saucepan. Bring to a boil on a medium heat, then reduce to a simmer. Simmer for 5 minutes.
  2. Mix the cornstarch with 1 tbsp of water and pour into the saucepan. Add the cocoa powder and stir to combine. Remove from heat and leave to cool.
  3. Once cooled, strain through a fine mesh sieve to remove seeds. 

To make the Bloody Bellini:

  1. Put the raspberries, lime juice, water, and cocoa powder into a blender and blend until smooth. Strain through a fine mesh sieve to remove seeds. 
  2. Dip the rim of your champagne flutes into the Raspberry Chocolate "Blood" syrup to coat, spoon a little extra over if it needs help getting some drips going. 
  3. Fill each champagne flute about 1/4 full with raspberry puree
  4. Top up with prosecco and garnish with a some gummy vampire teeth
  5. Serve immediately. 

Notes

Swap out the prosecco for sparkling grape juice for a fun kid friendly Halloween drink

Left over syrup can be stored in the fridge for two weeks

    This is insane Michelle. I don’t know where you get your cocktail ideas from but they are all amazing and this one might be your best yet! Obviously they do look fantastically gruesome and perfect for Halloween but I love how you’ve really though about the flavour and added that little touch of cocoa. Gruesome heaven.
