I am so excited to be back sharing new recipes and catching up with you all though! And I’m super excited about this Apple, Raspberry and Ginger Crumble for two recipe, it’s really yumy, so easy to make and how adorable is this two-person serving? I just love it! And I bet you will too!

I really love making single serving desserts, mostly because they’re adorable, but with Valentine’s Day fast approaching a dessert made especially for two people definitely needed to be on the menu. What’s more romantic than cooking your loved one a lovely dinner, with candles and flowers, and then ending it with a homemade dessert that you can share? It’s so simple to make as well, there’s no need to be slaving away in the kitchen all day just to impress your other half – you can even make it in advance, throw it all together and keep it in the fridge – then just stick it in the oven when you’re ready for dessert, perfect!

The tartness of the apples, the sweet berries and warming ginger just make for a delicious flavour you won’t be able to get enough of. It’s even better when you add that buttery, crunchy, spiced crumble topping – the perfect winter warmer for a cozy evening in with somebody you love. Can you picture it? Sitting in front of a crackling fire, on a comfy blanket snuggled up with the person you love sharing a fresh-from-the oven dessert, perhaps with a scoop of vanilla ice cream for that extra indulgence. I can’t think of a better way to spend Valentine’s Day anyway!

For the filling
  1. 2 Granny Smith apples (or your favourite tart apple), peeled, cored and chopped into 1/4" pieces
  2. Juice of 1 lemon
  3. 200g Raspberries, fresh or frozen
  4. 1" piece of fresh ginger, peeled and finely chopped
  5. 1/4 tsp ground cinnamon
  6. pinch of salt
  7. 3 tbsp brown suagr
  8. 2 tsp cornflour (cornstarch)
For the crumble
  1. 50g plain flour (all purpose)
  2. 1/4 tsp ground cinnamon
  3. 75g unsalted butter, cold and cut into cubes
  4. 25g caster sugar
  5. 50g oats
  6. 2 tsp demerara sugar (or brown sugar)
For the filling
  1. Put the chopped apples, lemon juice, raspberries, ginger, cinnamon, salt and sugar into a large saucepan. Heat on a medium heat, stirring, until the sugar has melted. Stir in the cornflour and cook on low for 5 minutes. Remove from heat and leave to cool.
To make the crumble
  1. Put the flour, sugar, cinnamon and ginger in a food processor* and pulse a couple of times to mix.
  2. Add the butter and pulse two or three times, until you have the texture of large, pea size bread crumbs. Add half (25g) of the oats and pulse once to combine.
  3. Preheat the oven to 175C/350F
  4. Spoon the filling into a 6" dish and spread out evenly.
  5. Spoon on the crumble topping and spread out evenly. Sprinkle the remaining oats on top and the demerara sugar.
  6. Bake for 25-30 minutes, until the filling is bubbling up the sides and the topping is golden brown.
  7. Serve warm, with a scoop of vanilla ice cream.
Notes
  1. *A food processor isn't necessary so don't worry if you don't have one. Either use a pastry blender to combine the butter into the mix, use two knives to blend it together or rub the butter in with your fingers.
  2. This recipe serves two, however if you want to make a larger one to serve more just double the ingredients as necessary. Adjust the baking time accordingly.

What are you guys up to this Valentine’s Day? Do you love it, hate it or somewhere in between? Personally, I think it’s a lovely holiday – we should, of course, tell the people we love that we love them all year round, but I think it’s nice to have a day dedicated to spoiling your loved ones and just general romance. And I don’t think it’s just for couples either, there are so many different kinds of love that are worth celebrating! But if you’re not a fan of V-day, perhaps try Galentine’s Day, invented by Leslie Knope and celebrated on February 13th – a day to celebrate all the wonderful women in your life! Perfect!

Whether you’re going to be celebrating Valentine’s Day this year or not, you definitely need to put this dessert on your to-make list, you won’t be sorry! And I certainly won’t judge you if you eat the entire two-person serving yourself, you deserve it! And, of course, you can double the recipe as needed to make a bigger dessert to serve more people – because this isn’t just perfect for V-day, it’s a great dessert to serve any time! I think it’s definitely going to become a favourite in this house, how about yours?

    What a unique combination of flavors! I’m a little ambivalent about Valentine’s Day…it can certainly be a fun excuse to do nice things or make little treats for family and friends, but it can also put a lot of pressure on couples. I’m definitely not ambivalent about this dessert, though – it looks wonderful!
