What do you love about summer? Is it the (hopefully) sunny weather and heat, the longer days, family trips and get togethers, the smell of rain on the hot ground, water fights, barbecues, or all of the above and more? I’m not generally a fan of hot weather, I wilt like a flower in the heat but I do love almost everything else about summer. To me, summer means days and evenings spent outside enjoying all the beautiful flavours that come with summer, and sharing them with friends and family – because what could be better than that?

And when the sun comes out, I need a drink in my hand – it has to be something refreshing and full of flavour. And this Frisky Summer Fruit Punch totally hits the spot, it’s so delicious and perfect for summer sipping. It’s made with home infused cucumber and apple bison grass vodka, so it’s got that refreshing, fruity taste right from the start. Then you stir in some freshly made fruit pureé for even more fruity flavour, add a little simple syrup for  more sweetness, also a little amaretto for a subtle flavour and top up with prosecco for bubbly refreshment. Then add heaps of fresh and frozen fruits to keep it cool and infuse more flavour – keep topping up your jug to keep the party going!

This really is the perfect summer drink to serve at parties, BBQs and big gatherings, since it’s so quick and easy to put together and lends itself perfectly to big batch making. There’s no need to keep chopping fruit with each new batch you make (you WILL want to make more than one batch, I promise) just top the jug up with more vodka, fruit pureé and prosecco and you’re good to go – the fresh fruits will keep infusing their flavour with each top up. I like to add some frozen fruit in to each batch too, because it keeps it cool without watering it down with ice cubes.

This summer punch really packs a, well, punch! Just like a good punch should be, it’s strong with plenty of flavour. I use a base of bison grass vodka, which is a delicious polish vodka infused with the herby flavour of bison grass – it’s absolutely delicious, and my go to vodka after Belvedere. I added even more flavour by infusing it with cucumber and apple, so easy to do and so yummy! Instructions are hardly needed for infusing vodka, you just throw in what fruit/flavours you want and let time do the rest. But I’ve put a quick little guide after the recipe, to help you along. Infusing spirits is one of my favourite things to do, and cucumber is my current favourite flavour to infuse – it’s incredibly refreshing and I couldn’t recommend it enough. Serves 5
A delicious, fruity summer punch made from infused vodkas, prosecco and fresh fruit! Perfect for summer get togethers, picnics and barbecues!

For the simple syrup
  1. 100ml water
  2. 200g sugar
  3. 2 limes - zest and juice
For the fruit puree
  1. 200g fruit, mix of strawberries, raspberries and blueberries
For the punch
  1. 60ml apple infused bison grass vodka*
  2. 60ml cucumber infused bison grass vodka*
  3. 200g fruit puree
  4. 4 tbsp of the simple syrup
  5. 3 tbsp amaretto
  6. 1 bottle of prosecco, cold
  7. Chopped fresh or frozen fruits
To make the syrup
  1. Combine all ingredients in a small sauce and boil for 3 minutes, stirring. Reduce heat and simmer for 20 minutes. Remove from heat and leave to cool.
To make the fruit puree
  1. Add the fruits to a blender and pulse until smooth. Strain if you want to remove any pips/seeds (I like to keep them in, but it's a personal preference)
To make the punch
  1. Add the vodkas to your large pitcher, stir in fruit puree. Add the 4 tbsp simple syrup and stir with a wooden spoon. Add the amaretto and stir.
  2. Slowly pour in the prosecco.
  3. Add the fruits and serve cold
Notes
  1. *You could use regular vodka but it won't have the same great flavour, if you do use regular vodka please use Polish - you want that unique perfume you get with it!
  2. *Please see notes after recipe on how to infuse vodka
  3. You can use your choice of fruits, summery ones are best for this punch! I used strawberries, blueberries and raspberries for the puree. Then the chopped fruits I used were limes, strawberries, cucumber and apples (I used the apples from the infused vodka that I had frozen!)
  4. For almond allergies, you can omit the amaretto and use another liquor of your choice - cherry would be yummy!
  5. Add 1/2 cup of ice to keep it cold if desired. You can also freeze the fruits beforehand for a tasty way of keeping it cold!

How to infuse vodka

Vodka is really easy to infuse, it's so much fun to do - any flavour you can dream up, you can make.

Ingredients

For the apple infused vodka:

  • 3 apples (I used braeburn, as they're tart at sweet). cored and chopped
  • 300ml bison grass vodka (or any polish vodka)

For the cucumber vodka:

  • 1 large cucumber, sliced with peel on
  • 300ml bison grass vodka (or any polish vodka)

Instructions

For the apple vodka:

  1. Put the chopped apples in a large mason jar. Fill up with the vodka, making sure all the apples are covered.
  2. Screw lid on tightly and place in a cool, dark place for at least 7 days.
  3. Drain, and store in tightly sealed jar/bottle indefinitely.

For the cucumber vodka:

  1. Put the sliced cucumber in a large mason jar, pour over the vodka making sure all the cucumber is covered.
  2. Screw lid on tight and store in a cool, dark place for at least 10 days.
  3. Drain, and store in a tightly sealed jar/bottle indefinitely.

Notes

The infusing time is a guide only. I wouldn't recommend leaving the apple in the vodka for more than two weeks, as it will go quite soft.

The cucumber can infuse for up to a month

The longer you leave it, you may need to drain through cheesecloth if the fruit starts to come apart in the vodka

This summer punch is absolutely delicious, so refreshing and very, very summery! It will be a huge hit at your picnic, BBQ or summer party! But as you can tell from the recipe it does contain quite a bit of alcohol, therefore please do drink it responsibly and make sure to drink plenty of water alongside, especially if you’re out in the sun! 

A fun alcohol free version of this summer punch would be to omit the vodka and amaretto and replace the prosecco with tonic water or sparkling lemonade – mix it with the fruit puree and add the chopped fruit, delicious and great for the kids and those who don’t drink alcohol!

    Zubrowka vodka is my absolute favourite vodka too Michelle! I discovered it in Poland and ever since my ‘signature’ cocktail has been a Polish Martini – bison grass vodka shaken with cinnamon and apple juice. I have not made one in forever though – I think I am going to have to go buy some of this vodka and have one this bank holiday weekend, and of course, I am going to have to try this amazing punch too!     I just made a bunch of infused liquors yesterday! Great minds think alike…..I’ve never heard of Bison Grass Vodka and now I will have to try it! I wonder if they have it in the states?     Here’s the truth… I absolutely loathe summer!! I know… my husband thinks I’m weird too! I just don’t like the heat! I hated summer in New Zealand (which is pretty cool all year round).
    BUT I LOVE the fruits, the colour, and sunshine!! 😀 I know I will definitely LOVE having this punch because it’s got everything I love (Fruits, and alcohol!) plus Ice to cool things down!!

      I’m with you on that, I cannot stand the heat! I love everything else about summer, it just needs to not be so hot! And I live in England so what we consider really hot probably feels fairly mild to you haha! I’ve been in Atlanta during the summer though and wanted to die!

      Thanks Sandi! Bison Grass vodka is actually pretty hard to find outside of Europe in my experience, which is a shame because it’s soooo good! Wish I could get my hands on some actual bison grass so I could make my own out of my favourite vodka though

    Cucumber vodka is the new vodka in our house! I have never heard of bison though? Sounds interesting. Being that we are in Phoenix for a few weeks and it is HOT, I am drinking a lot of cocktails! Because I also have the kids full time! I can’t wait to try this punch! And make it in a cool pitcher!
