Phew! What a crazy few weeks it has been over on the British side of the pond! Whether you live in the UK or not, I’m sure you’ve not been able to avoid all the drama surrounding the UK’s decision to leave the EU! It’s not the smartest decision the country has ever made as a country, but I think we’ve all heard enough about that! And I have the perfect post-Brexit treat for you all today – it’s delicious, it’s adorable, it’s no bake and it really couldn’t be easier. Seriously, I’m fairly certain these Berry Eton Mess Dessert Shots are the easiest recipe on the blog to date!

They take 15 minutes hands on time to make (I say “hands on” as the berry compote does need extra time to cool, but if you make that a day in advance you’re laughing!). What could be better than this? A dessert that will impress even the fussiest of guests that takes you almost zero effort? I think we all need more of that in our lives!

I don’t think we ever need an excuse to make delicious, adorable no bake desserts, but these little beauties are for this month’s Yum of the Month! The theme this month is “No Bake”, since it’s heating up on this side of the world and nobody wants their oven on for hours at a time. Which is exactly why we’re using store bought meringue in this recipe! I absolutely love homemade meringue and it’s so much easier to make than it seems, but it still involves having your oven on for a few hours (albeit at a low temperature). I love “from scratch” but I’m also a big fan of not taking it all too seriously and “cheating” every now and then. As long as you’re buying good quality, store bought meringues are totally yummy.

I do have a recipe for homemade meringue in my other Eton Mess recipe if you’d prefer to make your own, but that would of course mean this dessert is no longer “no bake” and will take longer – but hey, it’s your dessert, your rules! You wanna bake? Bake!

The only part of these Berry Eton Mess Dessert Shots that needs any kind of real preparation is the berry compote, but it honestly couldn’t be easier to make. Just throw all the ingredients in a pan, simmer for 5 minutes and you’re done. I totally recommend making it the day before or first thing in the morning, that way it has plenty of time to cool before you’re ready to serve dessert. You’ll want to assemble these dessert shots not long before you’re ready to serve, as the meringue softens with the cream and you lose the crunch. But don’t worry, they take five minutes max to assemble.

Remember, Eton Mess is called a mess for a reason so you don’t have to worry about being neat – I just like to pipe the whipped cream in because it makes it much easier to get it in the little jars/glasses. But get as messy as you want!

These Berry Eton Mess Dessert shots are served in little 90ml/3oz jam jars, which are so cute right?! Using this size jar/glass makes 7-8 dessert shots. You can also use tall shot glasses or little cups – whatever you like really. You can also easily double this recipe as needed to make even more, they’d be perfect for a treat table at a big party – everyone gets their own little three bite dessert treat. And nobody will feel bad about having seconds, or thirds, because they’re little and cute the calories barely even count! It also makes them the perfect little treat for little hands, the kids are happy because they got dessert and parents are happy because it’s perfectly portioned for them!

Berry Eton Mess Dessert Shots

Layers of meringue, fresh whipped cream and berry compote make up these adorable Berry Eton Mess Desserts! They're so quick and easy to make, plus they're no bake, making them the perfect summer get together dessert!

Ingredients

Berry compote:

  • 75g Blueberries
  • 100g Strawberries, hulled and quartered (weight is after hulling)
  • 75 Raspberries
  • Juice of 1/2 lemon
  • 50g Sugar
  • 1 tbsp water
  • 1 tsp cornflour (cornstarch)

Whipped cream:

  • 300ml double cream (whipping cream)
  • Juice of 1/2 lemon
  • 1.5 tbsp sugar

To serve:

  • 3-4 meringue nests (about 45g-60g of meringue)
  • Fresh berries for garnish

Instructions

Berry Compote:

  1. Put the berries, lemon juice and sugar in a small saucepan.
  2. Combine the water and cornflour and pour into the saucepan. Bring to the boil on a medium heat, then let simmer for 5 minutes, stirring occasionally.
  3. Remove from heat and transfer to a bowl, leave to cool completely.

Whipped Cream:

  1. Put the cream, lemon juice and sugar in metal bowl. Whip (by hand or with an electric beater) until soft and fluffy (soft peaks). Spoon into a piping bag with the tip of your choice (or just a snipped off end)

To serve:

  1. Put a layer of crumbled meringue at the bottom of each jar/glass.
  2. Pipe a layer of whipped cream
  3. Spoon on 1-2 tsp of cooled berry compote.
  4. Repeat these layers two more times.
  5. Finish off with another sprinkling of crumbled meringue, and top with fresh berries.
  6. Serve immediately.

Notes

Best served immediately. Berry compote can be made up to two days in advance.

What did I tell you? SO easy! These dessert shots are going to be a huge hit with whoever you serve them up to as well, they won’t be able to get enough. My mum, aka my chief taste tester, has already instructed me to make these all the time ! I will be happy to oblige, they’re so quick to make and I love them too! I used fresh berries for this recipe, but you can totally use frozen as well – meaning you can make these beauties all year long! Don’t let the seasons hold you back!

    This is a great recipe – I found this page on a Google search and was amazed by the website, there is so much here that I want to try making myself!
